How much caviar do I need?


A simple rule for hosts:


  • As a tasting or garnish — 10 to 15g per person

  • As a proper appetiser — 20 to 30g per person

  • As the centrepiece — 50g per person


When in doubt, order the larger tin. No host has ever regretted having more caviar.



How to serve caviar properly


Five rules that separate a caviar service from a caviar moment:


  1. Never use metal. Metal spoons taint the flavour. Always mother-of-pearl, bone, or glass.

  2. Serve on ice. Present the tin nestled in crushed ice - chilled, never warm.

  3. Store cold. Unopened, at the back of your fridge at 0–4°C. Once opened, enjoy within 48 hours.

  4. Don't chew - savour. Let the pearls rest on your tongue and press them gently against your palate.

  5. Less is more. A small spoonful taken slowly is worth more than a hurried mouthful.
